3/30/09 - Like a Crepe.

I started making crepes yesterday. In search for healthier options, I used whole wheat flour, and substituted olive oil for butter. The batch turned out too dense. More like pancakes than crepes.

Today, I adjusted the proportions and made another attempt.
Much closer this time around, but still not quite. The flour clumped together. I think it’s because I neglected the order of mixing wet and dry ingredients. Though the beads of flour were not obvious in the final product, I knew they were there.

I don’t want to make like anything, or be like anything.
