11/14/08 - Hungry Brandon’s Macaroni.

Brandon claimed to have starved himself yesterday in preparation for my dinner. I hope he was exaggerating. But he really did wolf down most of the macaroni in my 9 by 15 pan.

Action speaks louder than words.
This may just be the best compliment I’ve ever received for my food.

So what’s so special about this macaroni?
It’s made with a mix of Swiss and Red Leceister.

While I was shopping for the cheese at Di Bruno Brothers with Vicki and Cait, they suggested that I put in stewed tomatoes. They were absolutely right. The tartness adds a surprising dimension to the flavor.

To make the macaroni still more satisfying, I stirred in minced beef fried with caramelized onion and mushroom. When everything was ready in the pan, I poured a bit of butter over the top and coated the whole thing with a layer of seasoned bread crumbs.

Emilia tells me macaroni and cheese is better the next day. Sadly, I have no leftovers to prove her point. This one might just need an encore.
